Whisk together dressing ingredients in a jug or jar.

 

Mix together all of the salad ingredients in a large bowl. Toss with half of the dressing. Season with extra salt ONLY IF NEEDED (depends how salty your feta cheese is).

 

Top with brick of feta cheese and drizzle over remaining dressing.

INGREDIENTS:

FOR THE DRESSING:

  •  1/3 cup  olive oil
  •  3 tbsp  red wine vinegar
  •  1 tsp  minced garlic
  •  2 tsp  oregano
  •  2 tsp  parsley
  •  2 tsp  rosemary
  •  1/4 tsp  salt

 

FOR THE SALAD:

  •  2  large cucumbers halved length ways and sliced
  •  3  medium sized tomatoes
  •  1  bell pepper deseeded and sliced
  •  1 cup  green onion, coarse chopped
  •  14 oz can  chickpeas washed and drained
  •  10 oz  pitted kalamata olives
  •  31/2 oz  feta cheese
  •  1 sprig mint as a garnish
